Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700g)
  • 1 teaspoon kosher salt (for light brining)
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil (for searing)
  • 1 teaspoon garlic powder
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, finely minced
  • 1 teaspoon Worcestershire sauce (optional)
  • Salt and pepper to taste
  • Freshly chopped parsley or basil (optional, for garnish)
  • Romaine lettuce leaves (optional, for serving)
  • Croutons or toasted bread slices (optional, for serving)

Instructions

  1. In a large bowl, combine 4 cups (32 fl oz) of water with 1 teaspoon kosher salt. Stir until salt dissolves. Add chicken breasts and soak for 15 minutes to brine.
  2. While chicken brines, whisk together mayonnaise, grated Parmesan, Dijon mustard, lemon juice, minced garlic, Worcestershire sauce, salt, and pepper in a small bowl. Cover and refrigerate.
  3. Remove chicken from brine and pat dry with paper towels. Season both sides with black pepper and garlic powder.
  4. Heat olive oil in a heavy skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  5. Transfer chicken to a plate and let rest for 5 minutes to redistribute juices.
  6. Slice chicken against the grain into strips or bite-sized pieces. Drizzle generously with creamy Caesar dressing. Garnish with chopped parsley or basil and serve with romaine lettuce and croutons if desired.

Notes

Do not skip the brining step to keep chicken juicy and tender. Use fresh garlic in the dressing for authentic flavor. Let chicken rest after cooking to retain juices. If dressing is too thick, add a splash of water or milk to loosen. Dressing can be made ahead and refrigerated for better flavor.
