A quick and easy summer drink combining fresh raspberries, mint, and fizzy Rebel energy drink with creamy vanilla ice cream for a refreshing grown-up float.

Ingredients

  • 1 cup fresh raspberries (about 125 grams)
  • 1012 fresh mint leaves, washed and gently torn
  • 1 can Rebel energy drink (12 fl oz / 355 ml), original or citrus flavor
  • 2 scoops vanilla ice cream (about 1 cup / 240 ml)
  • 1 tablespoon freshly squeezed lime juice (15 ml)
  • 1 tablespoon simple syrup (optional, 15 ml)
  • 1 cup crushed ice (about 240 ml)

Instructions

  1. Muddle the raspberries and mint leaves gently in a glass or mixing bowl for 20-30 seconds until raspberries release juice and mint is fragrant, being careful not to over-muddle.
  2. Add freshly squeezed lime juice and simple syrup (if using), then stir gently to combine.
  3. Fill the glass about halfway with crushed ice.
  4. Slowly pour the Rebel energy drink over the ice and muddled mixture to maintain fizz.
  5. Carefully add 2 scoops of vanilla ice cream on top of the fizzy mixture to create the float effect.
  6. Garnish with a sprig of fresh mint and a few whole raspberries. Insert a straw and a long spoon, then serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Use fresh lime juice for best flavor. Chill ice cream and Rebel drink before assembling to keep float cold longer. Pour Rebel slowly to preserve fizz. For dairy-free, substitute vanilla ice cream with coconut or almond milk-based ice cream. For a kid-friendly version, omit Rebel or replace with caffeine-free sparkling beverage.
