These strawberry lemon blondies are quick, easy, and packed with bright citrus and jammy fruit. With a chewy texture and simple ingredients, they’re perfect for spring and summer gatherings.

  • ½ cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 2 large eggs, room temperature
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup fresh strawberries, diced
  • 1 tablespoon lemon zest (from about 1 large lemon)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • 12 teaspoons milk (for glaze, as needed)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. Melt the butter and let it cool slightly.
  3. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  4. Add eggs one at a time, whisking well after each. Stir in vanilla extract and lemon zest.
  5. In a separate bowl, whisk together flour, salt, and baking powder.
  6. Fold dry ingredients into wet mixture until just combined. Do not overmix.
  7. Gently fold in diced strawberries.
  8. Pour batter into prepared pan and spread evenly.
  9. Bake for 22-25 minutes, until edges are golden and center is set. A toothpick inserted should come out with moist crumbs.
  10. Cool in pan on a wire rack for 10 minutes, then lift out using parchment and cool completely.
  11. For glaze: whisk together powdered sugar and lemon juice until smooth. Add milk if needed to reach drizzling consistency.
  12. Drizzle glaze over cooled blondies. Let set for 15 minutes before slicing into 9 or 16 squares.

Notes

Don’t overmix the batter. Watch bake time closely; pull when center still looks slightly underdone. Dice strawberries uniformly (¼- to ½-inch). Use room temperature eggs. Cool completely before glazing. Blondies taste even better the next day.
