These star-shaped cheesecake pops are a quick, easy, and festive dessert perfect for Independence Day celebrations, featuring a buttery graham cracker crust and creamy cheesecake filling on a stick.

  • 1 ½ cups (150g) graham cracker crumbs
  • 5 tablespoons (70g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 16 oz (450g) cream cheese, softened
  • ¾ cup (90g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy whipping cream
  • 1 tablespoon fresh lemon juice
  • Red and blue sanding sugar or sprinkles
  • Star-shaped silicone molds or cookie cutters
  • Wooden lollipop sticks

Instructions

  1. Make the Crust: Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Stir until evenly coated and moistened. Press mixture firmly into the bottom of star-shaped molds about ¼ inch thick. Chill in fridge for at least 15 minutes to set.
  2. Prepare the Cheesecake Filling: Beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing well. In a separate bowl, whip heavy cream with lemon juice until soft peaks form. Gently fold whipped cream into cream cheese mixture in three additions.
  3. Assemble the Pops: Spoon cheesecake filling over chilled crust in molds, filling each star to the top. Smooth surface with spatula. Insert wooden lollipop stick halfway into each star. Freeze molds for at least 3 hours until firm.
  4. Finish and Decorate: Carefully pop cheesecake stars out of molds once frozen solid. Sprinkle red and blue sanding sugar or patriotic sprinkles over each pop. Optionally brush with melted white chocolate before sprinkling for better adhesion. Keep pops frozen until serving.

Notes

Let cream cheese soften at room temperature for about 30 minutes before mixing for smooth texture. Whip cream to soft peaks only to avoid graininess. Use gentle folding to keep filling airy. Chill crust before adding filling to prevent sogginess. Freeze pops for at least 3 hours to ensure firmness. If pops crack when unmolding, let thaw 3-5 minutes and try again gently. Wooden sticks provide better stability than plastic.
