Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick spray or line with parchment paper.
  2. Grate zucchini using a box grater or food processor. Place shredded zucchini in a clean kitchen towel and squeeze out excess moisture. You should have about 2 cups (200g).
  3. In a large bowl, whisk together dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg if using.
  4. In a separate bowl, beat eggs with granulated sugar and brown sugar until smooth and slightly pale, about 2 minutes.
  5. Gradually whisk in vegetable oil and vanilla extract into the egg and sugar mixture until combined.

  7. Fold in shredded zucchini and any optional add-ins like nuts, chocolate chips, or dried fruit.
