Fresh Strawberry Mango Popsicles

These fresh strawberry mango popsicles are an easy, quick, and refreshing homemade summer treat combining natural fruit sweetness with a creamy texture from coconut milk.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 large ripe mango, peeled and diced
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons fresh lime juice
  • 1/2 cup light coconut milk
  • 1 teaspoon pure vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Rinse and hull the strawberries, then slice them roughly. Peel and dice the mango into chunks.
  2. Add strawberries, mango, honey, fresh lime juice, coconut milk, vanilla extract (if using), and a pinch of salt to a high-speed blender.
  3. Blend on high until the mixture is completely smooth. Pause and stir if needed to help blend evenly.
  4. Taste the mixture and adjust sweetness by adding more honey or maple syrup if desired. Add more coconut milk or water if the mixture is too thick.
  5. Pour the blended mixture into popsicle molds, leaving a small gap at the top for expansion. Insert sticks.
  6. Freeze for 4-6 hours or overnight until solid.
  7. To unmold, run warm water over the outside of the molds for a few seconds and gently pull on the sticks. Serve immediately or store in a sealed container in the freezer.

Notes

Use ripe fruit for best flavor. Adjust sweetness after blending. For a layered look, blend strawberries and mangoes separately and freeze in alternating layers. Frozen fruit can be used if fresh is unavailable, just thaw slightly before blending. Substitute coconut milk with dairy-free yogurt or almond milk if preferred.
