A quick and easy summer snack featuring juicy watermelon, salty feta, fresh mint, and a tangy balsamic glaze, perfect for parties and warm-weather gatherings.

Ingredients

Scale
  • Seedless, firm, ripe watermelon, cut into 1-inch cubes
  • Firm block feta cheese, cut into 1-inch cubes
  • Fresh mint leaves
  • Balsamic glaze
  • Extra virgin olive oil (optional)
  • Sea salt
  • Black pepper
  • 6-inch wooden skewers

Instructions

  1. Rinse the watermelon and pat dry. Cut off the rind, then slice the flesh into 1-inch cubes.
  2. Cut the feta block into 1-inch cubes, chilling for 10 minutes beforehand if too soft.
  3. Rinse and pat dry fresh mint leaves; pick whole leaves or small clusters for threading.
  4. Thread one watermelon cube, one mint leaf, one feta cube, and another mint leaf onto each skewer, repeating until each skewer has 3–4 pieces.
  5. Arrange skewers on a serving platter. Lightly sprinkle sea salt and freshly cracked black pepper over the top.
  6. Drizzle balsamic glaze and a little extra virgin olive oil evenly over the skewers.
  7. Chill the platter in the fridge for 10–15 minutes before serving to let flavors meld and keep skewers cool (optional).

Notes

Use firm, block-style feta to prevent crumbling. Pat watermelon cubes dry if too juicy to avoid soggy skewers. Assemble shortly before serving for best freshness. Balsamic glaze adds a subtle tang; can substitute with fresh lemon juice. For dairy-free option, replace feta with firm avocado or vegan cheese.
