  • 1 teaspoon honey or maple syrup (7 ml)
  • 1/4 teaspoon salt (1.5 g)
  • Pinch of freshly ground black pepper
  • 12 tablespoons water or apple cider vinegar (1530 ml), optional

Instructions

  1. Juice one medium lemon (about 3 tablespoons / 45 ml), mince one garlic clove, and measure 1/2 cup (120 g) Greek yogurt or cottage cheese.
  2. In a bowl or jar, add lemon juice, Greek yogurt, and 2 tablespoons (30 ml) extra virgin olive oil. Whisk or shake vigorously until smooth and creamy.
  3. Stir in 1 teaspoon (5 g) Dijon mustard, 1 teaspoon (7 ml) honey or maple syrup, and the minced garlic. Mix well to blend all flavors evenly.
  4. Add 1/4 teaspoon (1.5 g) salt and a pinch of freshly ground black pepper. Taste and adjust seasoning as needed.
  5. If the dressing feels too thick, whisk in 1–2 tablespoons (15–30 ml) water or apple cider vinegar until you reach your preferred pourable texture.
  6. Allow the dressing to sit for 10-15 minutes to let flavors mingle and mellow the garlic’s sharpness.
  7. Pour over chopped fresh kale (massage the leaves gently for softer texture) and toss to coat evenly.

Notes

Massage kale leaves with a pinch of salt before dressing to soften and reduce bitterness. Let dressing rest 10-15 minutes before serving to mellow garlic and blend flavors. Store in airtight container in refrigerator up to 4 days. Shake or stir before use. For vegan version, substitute Greek yogurt with dairy-free yogurt and honey with maple syrup.
