  • 1 fresh pineapple, peeled and cut into 1-inch chunks
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons honey or pure maple syrup
  • 1/4 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon salt
  • Wooden or metal skewers (if wooden, soaked in water for at least 30 minutes)

Instructions

  1. Prepare the marinade by whisking together olive oil, honey, soy sauce, garlic, lime juice, smoked paprika, salt, and pepper in a medium bowl.
  2. Cut chicken breasts into 1-inch cubes and place in the marinade bowl. Toss to coat thoroughly, cover, and refrigerate for at least 30 minutes, up to 2 hours.
  3. Peel and cut the pineapple into 1-inch chunks.
  4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  5. Thread the kabobs by alternating chicken cubes and pineapple chunks onto each skewer, leaving small spaces between pieces.
  6. Preheat the grill to medium-high heat (about 400°F / 200°C) and lightly oil the grill grates.
  7. Place the skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes to ensure even charring. Brush with leftover marinade if desired.
  8. Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F (74°C). The pineapple should be caramelized and slightly charred.
  9. Remove kabobs from the grill and let rest for 5 minutes before serving.

Soak wooden skewers in water for at least 30 minutes to prevent burning. Use fresh pineapple for best grilling results.
