  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh oregano, finely chopped (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • Optional add-ins: sliced bell peppers, radishes, or toasted pine nuts

Instructions

  1. Wash and dry the cherry tomatoes, then halve them carefully. Dice the cucumber into bite-sized pieces, and thinly slice the red onion. Chop the parsley and oregano finely. (About 8 minutes)
  2. In a small bowl, whisk together fresh lemon juice, extra virgin olive oil, dried oregano, salt, and black pepper until the dressing is bright, tangy, and slightly thick. Add a little more olive oil if too sharp.
  3. In a medium mixing bowl, combine tomatoes, cucumber, olives, red onion, parsley, and oregano. Pour the dressing over and gently toss to coat evenly. (About 3 minutes)
  4. Spoon about one cup (225g) of cottage cheese into serving bowls. Top with a generous helping of the dressed Greek salad mixture. Sprinkle crumbled feta cheese on top if using.
  5. Season with cracked black pepper and extra chopped parsley if desired. Serve immediately for freshest crunch or chill for 10 minutes to meld flavors slightly.
