  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons water
  • 1 teaspoon cornstarch
  • 2 green onions, thinly sliced (optional)
  • 1 tablespoon sesame seeds (optional)
  • Wooden skewers, soaked in water for at least 30 minutes

Instructions

  1. Cut the chicken thighs into 1.5-inch chunks for even cooking and juicy bites.
  2. In a medium bowl, whisk together soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil until honey dissolves.
  3. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for 30 minutes to 1 hour.
  4. In a small bowl, mix cornstarch with water until smooth and set aside.
  5. Drain chicken pieces from marinade (reserve marinade for glaze). Thread chicken onto soaked wooden skewers, leaving space between pieces.
  6. Preheat grill or grill pan over medium-high heat. Cook skewers about 5 minutes per side, turning carefully.
  7. Pour reserved marinade into a small saucepan and bring to a simmer over medium heat. Stir in cornstarch slurry and cook 2-3 minutes until thickened and glossy, stirring constantly.
  8. Brush glaze generously over chicken skewers during the last few minutes of grilling to create a sticky coating.
  9. Remove skewers from grill, sprinkle with sesame seeds and sliced green onions, and serve immediately.
