Flavorful Italian Sushi Rolls Recipe with Fresh Herbs and Parmesan Made Easy

A fresh and light fusion recipe combining Italian flavors with sushi roll format, featuring fresh herbs and Parmesan wrapped in delicate rice paper. Quick and easy to prepare, perfect for a light meal or appetizer.

Ingredients

  • Rice paper wrappers
  • Fresh basil leaves
  • Fresh oregano
  • Fresh parsley (flat-leaf preferred)
  • Grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • Cooked Arborio rice (or leftover risotto)
  • Olive oil (extra virgin)
  • Lemon zest
  • Lemon juice
  • Cracked black pepper
  • Salt
  • Optional: roasted red peppers or sun-dried tomatoes

Instructions

  1. Rinse 1 cup (200g) Arborio rice under cold water until water runs clear. Cook with 1 ½ cups (360ml) water over medium heat, stirring occasionally, until tender and creamy, about 18-20 minutes. Let cool slightly.
  2. In a bowl, combine cooled rice with ½ cup (50g) finely grated Parmesan, ¼ cup each of chopped fresh basil, oregano, and parsley. Add 1 tsp lemon zest, 1 tbsp lemon juice, about 1 tbsp olive oil, salt to taste, and freshly cracked black pepper. Stir gently to combine without mashing the rice.
  3. Fill a large shallow bowl with warm water. Dip one rice paper wrapper into water for 15-20 seconds until pliable but not too soft. Lay flat on cutting board or sushi mat.
  4. Place a thin line of rice and herb mixture about 1 inch from the edge closest to you, leaving about an inch on each side. Add optional roasted red peppers or sun-dried tomatoes on top if using.
  5. Fold sides over filling gently, then roll tightly away from you to enclose filling completely. Use fingers to tuck filling in as you roll, keeping it firm but not squished.
  6. Using a sharp knife, slice roll into 6-8 pieces. Repeat with remaining wrappers and filling. Serve immediately or chill for 15 minutes for a refreshing bite.

Notes

Avoid soaking rice paper wrappers too long to prevent tearing. Use a sharp knife to slice rolls cleanly. Keep a damp towel over prepared rolls to prevent drying. Rolls can be chilled or served at room temperature. Store wrapped in plastic in fridge up to 24 hours; avoid freezing.
