Instructions

  1. Rinse and pat dry chicken thighs, then cut into 1-inch bite-sized pieces. Season with salt, pepper, smoked paprika, and cumin. Set aside.
  2. In a small bowl, mix softened butter, honey, and minced garlic until combined. Have BBQ sauce ready.
  3. Heat a large skillet over medium-high heat. Add oil if needed. Cook chicken pieces in a single layer for 4-5 minutes on one side until golden brown, then flip and cook 3-4 minutes until cooked through (165°F internal temperature). Remove chicken to a plate.
  4. Lower heat to medium-low. In the same skillet, add honey garlic butter mixture and stir gently for 1 minute to melt and infuse garlic.
  5. Stir in BBQ sauce until smooth and heated through.
  6. Return chicken to skillet and toss to coat evenly in sauce. Simmer for 2 minutes to meld flavors and thicken sauce.
  7. Warm tortillas in a dry skillet over medium heat, about 30 seconds per side, then keep warm wrapped in a towel.
