  • ½ cup mayonnaise (preferably Duke’s)
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon prepared horseradish (optional)
  • 1 tablespoon sugar
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 4 soft sandwich buns or brioche buns, toasted
  • Optional toppings: thinly sliced onions, pickles, or coleslaw

Instructions

  1. Remove skin and bones from rotisserie chicken and chop meat into small, uniform pieces (about 3 cups).
  2. In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, sugar, black pepper, salt, and garlic powder until well combined.
  3. Add chopped chicken to the sauce and stir gently until every piece is evenly coated. Let sit for 10 minutes if possible to meld flavors.
  4. Heat a skillet or grill pan over medium heat. Slice buns in half and toast cut sides until golden brown, about 1-2 minutes.
  5. Assemble sandwiches by piling the chopped chicken mixture on the bottom half of each bun. Add optional toppings if desired, then top with the other half of the bun.
  6. Serve immediately while buns are warm and chicken is creamy and tangy.

Notes

If sauce is too thick, thin with a splash of apple cider vinegar or a teaspoon of water. Chopping chicken finely helps sauce coat every bite. Toast buns just until golden to avoid sogginess. Sauce can be made ahead and tastes better after chilling. For gluten-free, substitute buns with gluten-free rolls or lettuce wraps.
