  • 3 tablespoons raw or organic honey
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon fresh lemon juice
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Rinse and pat dry the peaches. Cut each peach in half and remove the pits. Arrange the halves cut-side up in the baking dish, spacing them evenly.
  3. In a small bowl, whisk together honey, melted butter, ground cinnamon, vanilla extract, fresh lemon juice, and a pinch of sea salt until smooth and glossy.
  4. Brush about half of the honey glaze over the cut side of each peach half using a basting brush or spoon.
  5. Bake the peaches for 15 minutes until they begin to soften and the glaze starts bubbling.
  6. Remove the baking dish from the oven and brush the remaining honey glaze over the peaches.
  7. Return the peaches to the oven and bake for an additional 10-12 minutes, or until tender but still holding their shape.
  8. Let the peaches rest for about 5 minutes before serving to allow the glaze to thicken.

Notes

Apply the honey glaze in two stages to prevent burning and achieve a perfect caramelized finish. Use lemon juice to preserve peach color and balance sweetness. Freestone peaches are preferred for easier pitting and better texture. Peaches can be served warm or chilled. For vegan version, substitute butter with plant-based alternative and honey with maple syrup or agave nectar. Optional toppings include toasted nuts or a sprinkle of nutmeg or clove for added warmth.
