  • 1 sheet all-butter puff pastry, thawed
  • 3 ripe pears (Bosc or Anjou), peeled if desired and thinly sliced (about 1/4 inch thick)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves (optional)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon coarse sugar (turbinado or demerara) for sprinkling
  • Optional: chopped toasted pecans or walnuts

Instructions

  1. Thaw the puff pastry sheet at room temperature for 30-40 minutes until pliable but still cold.
  2. Peel (if preferred) and slice pears into thin, even slices about 1/4 inch thick.
  3. In a bowl, toss pear slices with brown sugar, cinnamon, nutmeg, ground cloves, lemon juice, and vanilla extract. Let sit for 10 minutes to marry flavors.
  4. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  5. On a lightly floured surface, unfold or roll out the puff pastry sheet and cut into 4 equal rectangles (about 4×4 inches each).
  6. Score a 1/2-inch border around each rectangle without cutting all the way through to create a puffed edge.
  7. Arrange pear slices evenly inside the borders on each pastry piece, overlapping slightly but not piling too high.
  8. Brush melted butter over the pears and pastry edges, then sprinkle coarse sugar on top.
  9. Bake for 20-25 minutes until pastry is golden and puffed and pears are tender and bubbling.
  10. Cool the tarts on a rack for 5-10 minutes before serving warm or at room temperature.

Notes

Keep puff pastry cold before baking to ensure good puff. Score borders lightly without cutting through. Drain excess pear juice if pears are very juicy to prevent soggy crust. Use coarse sugar on top for caramelized crunch. Serve warm or at room temperature with whipped cream or vanilla ice cream. Store in airtight container refrigerated up to 3 days and reheat in oven to maintain crispiness.
