  • ½ cup (120 ml) vegetable oil (canola or sunflower preferred)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups packed grated zucchini (about 2 medium zucchinis), excess moisture squeezed out
  • ½ cup (60 g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. Grate the zucchini using a box grater or food processor shredder. If very watery, squeeze out excess moisture with a clean kitchen towel.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. In a large bowl, beat together the sugar and vegetable oil until well blended. Add eggs one at a time, beating after each addition. Stir in vanilla extract.
  5. Fold the grated zucchini into the wet mixture until combined.
  6. Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula just until combined. If using, fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not over-squeeze the zucchini to keep moisture for tenderness. Use room temperature eggs and oil for better mixing. Fold ingredients gently to avoid tough bread. Rotate pan halfway through baking for even browning. Tent with foil after 40 minutes if oven runs hot to prevent burning. Variations include gluten-free flour, vegan substitutions, adding chocolate chips or dried fruit, and nut-free options.
