A quick and easy low-carb lunch featuring juicy, spiced chicken wrapped in fresh butter lettuce leaves, perfect for keto and paleo diets.

  • 1 lb boneless, skinless chicken breasts or thighs, finely chopped or shredded
  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
  • 1 small carrot, julienned
  • ½ red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp soy sauce or tamari (use gluten-free tamari if needed)
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp Sriracha or chili paste (optional)
  • Salt and pepper to taste
  • 1 tbsp toasted sesame seeds
  • Fresh cilantro or parsley for garnish

Instructions

  1. Wash and separate the lettuce leaves carefully so they stay whole and crisp. Julienne the carrot and slice the red pepper thinly. Chop the green onions and mince the garlic and ginger.
  2. Heat 1 tbsp of sesame oil in your skillet over medium heat. Add the minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  3. Add the chopped chicken, season lightly with salt and pepper, and cook until no longer pink, stirring occasionally to brown evenly (about 8-10 minutes).
  4. Pour in the soy sauce, rice vinegar, and Sriracha (if using). Stir well to coat the chicken and let the sauce reduce slightly, about 1-2 minutes.
  5. Remove the chicken from heat and let it cool for a minute or two. Spoon a generous amount onto each lettuce leaf.
  6. Top with julienned carrots, bell peppers, green onions, and a sprinkle of toasted sesame seeds. Garnish with fresh cilantro or parsley if desired.
  7. Serve immediately for best freshness, or store chicken filling separately in the fridge for up to 3 days.

Notes

Use butter or Boston lettuce for best wrap texture. Toast sesame seeds for added crunch and flavor. If lettuce leaves are stiff, wrap in damp paper towel and chill for 15 minutes before assembling. Cook chicken just until opaque to keep it juicy. Store chicken filling separately from lettuce to avoid sogginess.
