This easy Hawaiian teriyaki chicken features a sticky, sweet, and savory glaze made with simple pantry ingredients. Ready in about 30 minutes, it’s perfect for weeknight dinners and sure to be a crowd-pleaser.

  • 1.5 lbs boneless, skinless chicken thighs
  • ½ cup low-sodium soy sauce
  • ⅓ cup packed brown sugar (light or dark)
  • ¼ cup pineapple juice
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 teaspoon sesame oil
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions

  1. Trim excess fat from chicken thighs, pat dry, and cut into bite-sized pieces (about 1.5 inches). Season lightly with salt and pepper.
  2. In a small bowl, whisk together soy sauce, brown sugar, pineapple juice, rice vinegar, minced garlic, and grated ginger until sugar is mostly dissolved.
  3. In another small bowl, mix cornstarch with 2 tablespoons cold water until smooth to make a slurry.
  4. Heat a large skillet over medium-high heat with 1 tablespoon vegetable oil. Add chicken in a single layer (work in batches if needed) and cook undisturbed for 3-4 minutes until golden brown. Flip and cook another 3-4 minutes until cooked through (internal temperature 165°F).
  5. Pour the soy sauce mixture into the skillet with the cooked chicken. Stir to coat and bring to a simmer.
  6. Stir the cornstarch slurry, then pour it into the simmering sauce. Stir constantly for 30-60 seconds until the sauce thickens and becomes glossy.
  7. Drizzle sesame oil over the chicken and stir. Remove from heat and let rest for 1-2 minutes.
  8. Serve over steamed rice, garnished with sesame seeds and sliced green onions.

Notes

For extra sauce, make 1.5 times the sauce ingredients and double the cornstarch slurry. Don’t walk away during the thickening step—the sauce can burn quickly. Let the chicken rest after cooking for the sauce to thicken further.
