A quick and easy recipe combining juicy Mediterranean-spiced chicken with fresh toppings and a creamy tzatziki-style sauce, perfect for weeknight dinners.

  • 1 pound boneless, skinless chicken thighs
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano (or 1 tablespoon fresh, chopped)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup Greek yogurt (full-fat preferred)
  • 1/4 cup cucumber, finely grated and drained
  • 1 small clove garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 6 small soft tortillas (flour or corn, warmed)
  • 1 cup chopped cherry or grape tomatoes
  • 1/2 cup thinly sliced red onion (optional: soaked briefly in cold water)
  • 1/2 cup crumbled feta cheese (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a medium bowl, combine olive oil, minced garlic, lemon juice, oregano, cumin, smoked paprika, salt, and pepper. Whisk until well blended.
  2. Cut chicken thighs into thin strips or bite-sized pieces. Add to the marinade, tossing to coat evenly. Cover and refrigerate for at least 15 minutes (up to 1 hour for deeper flavor).
  3. While chicken marinates, grate cucumber finely and press out excess moisture. In a small bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper. Stir well and refrigerate until serving.
  4. Heat a skillet over medium-high heat. Add marinated chicken pieces in a single layer (cook in batches if needed). Cook for 4-5 minutes per side until golden and cooked through.
  5. Warm tortillas by wrapping in foil and placing in a 300°F oven for 5-7 minutes or heating on a dry skillet for 30 seconds each side.
  6. Assemble tacos by spooning cooked chicken onto each tortilla. Top with tzatziki sauce, chopped tomatoes, red onion slices, crumbled feta, and garnish with fresh parsley or cilantro. Serve immediately.

Notes

Marinate chicken for at least 15 minutes for best flavor; longer marinating (up to 1 hour) enhances taste. Pat chicken dry before cooking to get a good sear. Avoid overcrowding the pan to prevent steaming. Drain cucumber well to avoid watery sauce. Warm tortillas before assembling for best texture. Customize heat with red pepper flakes or hot sauce. For dairy-free, substitute Greek yogurt with coconut yogurt or cashew cream. Use corn tortillas for gluten-free option.
