Instructions

  1. Prepare the Cherry Pie Filling: In a medium saucepan, combine cherries, sugar, cornstarch, lemon juice, almond extract, cinnamon, and salt.
  2. Place over medium heat and stir frequently to avoid lumps. Cook until mixture bubbles and thickens, about 5-7 minutes, until jammy but cherries hold shape. Remove from heat and let cool slightly.
  3. Make the Cobbler Topping: Preheat oven to 375°F (190°C). In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
  4. Add cold, cubed butter and cut into dry ingredients using a pastry cutter or forks until mixture resembles coarse crumbs with pea-sized butter bits.
  5. Pour in milk and vanilla extract; stir gently just until combined. Batter should be thick but spreadable; do not overmix.
