  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • 1/4 cup (40g) mini dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Mix the dry ingredients: In a mixing bowl, combine rolled oats, chocolate protein powder, unsweetened cocoa powder, chia seeds (if using), and salt. Stir well to evenly distribute everything (2-3 minutes).
  2. Add the wet ingredients: Add natural peanut butter, honey or maple syrup, and vanilla extract to the dry mix. Fold together with a spatula until a sticky dough forms. Add water a teaspoon at a time if mixture is too dry (about 5 minutes).
  3. Incorporate chocolate chips: Gently fold in mini dark chocolate chips to distribute pockets of sweetness.
  4. Shape the bites: Form the mixture into 1-inch bite-sized balls using hands or a small cookie scoop. Place on a baking sheet or plate lined with parchment paper. Yield about 15-18 bites.
  5. Chill: Cover with plastic wrap and refrigerate for at least 30 minutes to firm up and enhance fudgy texture.
