  • Bang Bang Sauce:
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon lime juice, freshly squeezed
  • Drizzle of honey or light brown sugar (optional)

Instructions

  1. In a medium bowl, whisk together 1/2 cup buttermilk, 1 teaspoon garlic powder, 1/2 teaspoon paprika, 1/4 teaspoon cayenne pepper, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  2. Add chicken pieces to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes up to 2 hours.
  3. In a shallow dish, combine 3/4 cup flour, 1/4 cup cornstarch, 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, 1/4 teaspoon cayenne pepper, and a pinch of black pepper. Mix well.
  4. Beat 2 eggs in another bowl until smooth.
  5. Remove chicken from marinade, letting excess drip off, and thread pieces onto skewers.
  6. Dip each skewer into beaten eggs, then dredge thoroughly in the flour mixture, pressing gently to coat well. Set aside.
  7. Heat vegetable oil in a deep fryer or large skillet to 350ยฐF (175ยฐC) to a depth of about 2 inches.
  8. Fry 2-3 skewers at a time for 4-5 minutes, turning occasionally, until golden brown and cooked through (internal temp 165ยฐF). Avoid overcrowding.
  9. Remove skewers and drain on paper towels. Let rest for 1-2 minutes.
  10. While frying, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey in a small bowl to make the bang bang sauce.
  11. Toss fried skewers gently in the bang bang sauce or serve sauce on the side for dipping. Garnish with chopped green onions or sesame seeds if desired.

Maintain oil temperature at 350ยฐF to avoid greasy or burnt coating. Marinate chicken at least 30 minutes for tenderness. Press flour coating firmly for even crispiness.
