Instructions

  1. Pat the salmon dry thoroughly with paper towels.
  2. Cut the salmon into 1-inch bite-sized cubes.
  3. In a medium bowl, combine garlic powder, paprika, salt, and pepper. Add salmon cubes and toss gently to coat. Sprinkle cornstarch over the top and toss again until evenly coated.
  4. In a small saucepan, whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Bring to a gentle simmer over medium heat. Whisk in the cornstarch slurry and cook for about 1 minute until thickened and glossy. Remove from heat and set aside.
  5. Heat a large non-stick skillet or cast iron pan over medium-high heat. Add olive oil and let it heat until shimmering (about 2 minutes).
  6. Place salmon pieces in the hot pan in a single layer without overcrowding. Cook undisturbed for 2-3 minutes until golden brown and crispy. Flip each piece and cook for another 2-3 minutes.
  7. Transfer cooked salmon bites to a plate lined with paper towels to drain excess oil. Let rest for about 1 minute.
