Ingredients

  • Salmon fillets, skin removed and cut into 1-inch chunks (fresh or thawed)
  • Panko breadcrumbs (Japanese-style recommended)
  • All-purpose flour
  • Eggs, beaten
  • Garlic powder
  • Salt and black pepper, to taste
  • Olive oil or vegetable oil for shallow frying
  • Honey (about 3 tablespoons)
  • Fresh garlic, minced (2 cloves)
  • Soy sauce (2 tablespoons, low sodium preferred)
  • Lemon juice (1 tablespoon, freshly squeezed)
  • Water (1 to 2 tablespoons, to thin the dip if needed)
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Rinse and pat dry the salmon fillets. Remove the skin if attached and cut into uniform 1-inch chunks. Set aside.
  2. Prepare three bowls: one with all-purpose flour seasoned lightly with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, salt, and black pepper.
  3. Dredge each salmon chunk first in the flour, shaking off excess, then dip into the beaten eggs, and finally coat thoroughly with the panko mixture. Place coated bites on a plate or tray.
  4. Heat about 1/4 inch of oil in a skillet over medium heat until shimmering but not smoking (around 350°F). Test by dropping a few breadcrumbs into the oil; they should sizzle immediately.
  5. Carefully place coated salmon bites into the hot oil without overcrowding. Fry for 2-3 minutes per side until golden brown and crispy, and the internal temperature reaches 145°F.
  6. Remove bites with a slotted spoon and drain on paper towels. Let rest for a minute to set the crispiness.
  7. While frying, combine honey, minced garlic, soy sauce, and lemon juice in a small bowl. Whisk until combined. Add water to thin if needed and red pepper flakes for heat if desired.
  8. Serve the crispy salmon bites immediately with the honey garlic dip on the side.

Use medium heat to avoid burning the coating or undercooking the salmon. Pat salmon dry before coating to ensure crispiness. Fry in batches to avoid overcrowding the pan.
