Crispy Pan Seared Salmon with Garlic Butter

A quick and easy recipe for perfectly crispy salmon skin with a rich garlic butter sauce, ideal for busy weeknights or impressing guests.

  • Salmon fillets, skin-on, about 6 oz (170 g) each
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (extra virgin or light)
  • 3 tablespoons unsalted butter (45 g)
  • 3 large garlic cloves, minced
  • Juice of half a fresh lemon
  • Small handful fresh parsley, chopped
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Pat the salmon fillets dry with paper towels and season both sides generously with salt and pepper. Let sit at room temperature for 10 minutes.
  2. Heat a skillet over medium-high heat and add 1 tablespoon olive oil. Heat until shimmering but not smoking, about 2-3 minutes.
  3. Place salmon fillets skin-side down in the pan. Press gently to ensure even contact. Cook undisturbed for 5-6 minutes until skin is crispy.
  4. Flip the salmon carefully and cook the flesh side for 2-3 minutes until cooked through and flakes easily (internal temperature about 125°F/52°C).
  5. Reduce heat to medium-low. Push salmon to one side of the pan. Add butter and minced garlic to the empty side. Stir gently as butter melts and garlic softens, about 1-2 minutes.
  6. Tilt the pan and spoon garlic butter over the salmon repeatedly for about 1 minute to baste.
  7. Squeeze fresh lemon juice over the salmon and sprinkle with chopped parsley before serving.

Notes

Pat salmon dry thoroughly for crispy skin. Do not move salmon while searing skin-side down to avoid tearing. Add butter after salmon is mostly cooked to prevent burning. Let salmon rest a minute before serving. Optional: add crushed red pepper flakes to butter for heat. Can finish in oven at 400°F for 5 minutes if preferred.
