These crispy oven-fried feta rolls feature flaky phyllo dough wrapped around creamy feta cheese, baked to golden perfection and served with a sticky, mildly spicy sweet chili honey dip. Perfect for quick entertaining and crowd-pleasing snacks.

  • Phyllo dough sheets (thawed and ready to use)
  • 8 ounces (225 grams) feta cheese, firm block-style
  • Olive oil, extra virgin, for brushing
  • Honey (raw or wildflower) for the dip
  • 1 teaspoon chili flakes (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • Fresh thyme or oregano, finely chopped (optional)
  • Freshly ground black pepper, to taste
  • 1 large egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C / 180°C fan). Line a rimmed baking sheet with parchment paper.
  2. In a bowl, crumble the feta cheese. Add freshly ground black pepper and chopped fresh thyme or oregano if using. Mix gently.
  3. Carefully unroll the thawed phyllo sheets and cover with a damp kitchen towel to prevent drying.
  4. Cut the phyllo sheets into rectangles approximately 4×6 inches (10×15 cm). Use two layers per roll.
  5. Brush the first phyllo rectangle lightly with olive oil, place the second on top and brush again.
  6. Place about 1 to 1.5 tablespoons of the feta mixture at one end, fold the sides over, and roll tightly to seal.
  7. Brush the outside of each roll with egg wash for a golden finish.
  8. Place the rolls seam side down on the prepared baking sheet, spacing them apart.
  9. Bake for 15–18 minutes or until golden and crisp, turning the tray halfway through baking.
  10. While baking, gently warm the honey in a small saucepan or microwave for about 20 seconds.
  11. Stir in chili flakes and fresh lemon juice into the warmed honey. Adjust seasoning to taste and keep warm.
  12. Serve the rolls immediately, drizzled with the sweet chili honey or with the dip on the side.

Notes

Keep phyllo covered with a damp towel to prevent drying. Brush olive oil gently but generously between phyllo layers for crispiness. Seal edges well with egg wash to prevent filling leakage. If rolls brown unevenly, broil for 1-2 minutes at the end. Reheat leftovers in a 350°F oven for 8-10 minutes to maintain crispness. Freeze assembled rolls before baking for make-ahead convenience.
