Instructions

  1. Marinate the chicken: In a large bowl, whisk together buttermilk, garlic powder, onion powder, salt, and black pepper. Submerge chicken thighs, cover, and refrigerate for at least 15 minutes.
  2. Prepare the flour coating: In a separate bowl, combine flour, smoked paprika, cayenne pepper, salt, black pepper, and baking powder. Mix well.
  3. Dredge the chicken: Remove chicken from marinade one piece at a time, letting excess drip off. Coat thoroughly in flour mixture and set aside.
  4. Heat oil: Pour vegetable oil into a skillet until about 2 inches deep. Heat to 350ยฐF (175ยฐC).
