  • Wooden or metal skewers (wooden soaked in water for 30 minutes before use)
  • Optional: Parmesan cheese, for sprinkling

  • Optional: Dried Italian herbs (thyme, oregano, basil) as a substitute for parsley

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes beforehand.
  2. Wash the zucchinis and slice into ยฝ-inch thick rounds, aiming for even thickness.
  3. In a small bowl, melt 4 tablespoons of unsalted butter. Stir in minced garlic, lemon juice, chopped parsley, kosher salt, and freshly cracked black pepper. Mix well.
  4. Thread 6-8 zucchini slices onto each skewer, leaving a small space between slices for heat circulation.
  5. Preheat grill to medium-high heat (around 375ยฐF/190ยฐC). Lightly oil the grill grates or use a grill basket to prevent sticking.
  6. Brush both sides of the zucchini skewers generously with the garlic butter mixture.
  7. Place skewers on the grill and cook for 4-5 minutes per side, flipping carefully with tongs, until grill marks appear and edges are golden and crispy.
  8. If garlic butter drips excessively, move skewers to a cooler part of the grill to avoid flare-ups.
  9. Optional: Once off the grill, sprinkle with freshly grated Parmesan cheese or red pepper flakes if desired.
  10. Serve warm immediately for best crispy texture.
