A simple and flavorful recipe featuring crispy skin chicken thighs rubbed with fresh garlic, rosemary, and thyme. Perfect for a quick, cozy dinner with a golden crust and juicy interior.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700 g)
  • 23 sprigs fresh rosemary, finely chopped
  • 34 sprigs fresh thyme, leaves stripped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil (extra virgin recommended)
  • 1 tsp kosher salt (or to taste)
  • ½ tsp freshly ground black pepper
  • 1 small lemon, zest and juice (optional)

Instructions

  1. Pat chicken thighs dry with paper towels. Season both sides with kosher salt and black pepper. Let rest at room temperature for 10-15 minutes.
  2. In a small bowl, combine minced garlic, olive oil, chopped rosemary, thyme leaves, and lemon zest. Stir to create a herb-garlic paste.
  3. Coat each chicken thigh generously with the garlic herb mixture, including under the skin if possible.
  4. Heat a large cast iron skillet over medium-high heat for about 3 minutes. Add 1 tablespoon olive oil and swirl to coat.
  5. Place chicken thighs skin-side down in the pan. Press lightly with tongs for even contact. Cook without moving for 7-8 minutes until skin is golden and crispy.
  6. Flip chicken and reduce heat to medium. Cook for another 8-10 minutes until internal temperature reaches 165°F (74°C).
  7. Optional: Squeeze fresh lemon juice over chicken just before serving.
  8. Let chicken rest for 5 minutes before serving.

Notes

Pat chicken dry for crispy skin. Avoid overcrowding the pan to prevent soggy skin. Use medium-high heat to sear, then reduce heat to cook through. Rest chicken before serving to lock in juices. Use a meat thermometer for best results. To reheat leftovers, warm gently in a skillet or under the broiler to maintain crispiness.
