Instructions

  1. Wash and cut 2 pounds of Yukon Gold or red potatoes into roughly 1-inch chunks. Pat dry with a kitchen towel to remove excess moisture.
  2. In a large bowl, combine 3 tablespoons extra virgin olive oil, 4 crushed or minced garlic cloves, 2 teaspoons chopped fresh rosemary, 1 teaspoon thyme leaves, 1 teaspoon kosher salt, and ½ teaspoon freshly ground black pepper. Stir well to blend flavors.
  3. Add the potato chunks to the bowl and toss thoroughly to coat every piece in the herb-garlic oil mixture. Let marinate for 10-15 minutes if time allows.
  4. Preheat the grill to medium-high heat, about 400°F (204°C). Lightly oil the grill basket or pan to prevent sticking.
  5. Transfer the potatoes to the grill basket, spreading them evenly. Close the lid and cook for 20-25 minutes, shaking or turning every 5-7 minutes to ensure even crisping and prevent burning. Test tenderness with a fork.
  6. Once grilled, transfer potatoes back to the bowl. Add 1 tablespoon chopped fresh parsley and the zest of half a lemon (optional). Toss lightly to combine and adjust seasoning if needed.
