  • 1 tablespoon (14g) unsalted butter (optional but recommended)
  • Fresh black pepper, coarsely ground, to taste

  • Fresh herbs like parsley or chives, finely chopped (optional)
  • Smoked paprika or chili flakes (optional)

Instructions

  1. Pat the crumbled feta dry with paper towels to remove excess moisture and place in a small bowl.
  2. Lightly dredge the feta with all-purpose flour, tossing gently to coat evenly.
  3. Heat olive oil and butter in a medium non-stick or cast-iron skillet over medium heat until butter foams and oil shimmers (about 2-3 minutes).
  4. Spread the floured feta evenly in the skillet and fry undisturbed for 3-4 minutes until a crispy, golden crust forms on the bottom.
  5. Carefully flip the feta pieces and cook for another 2-3 minutes until both sides are golden and crispy, lowering heat if browning too fast.
  6. Crack two eggs gently into the pan around the feta. Season with sea salt and freshly ground black pepper.
  7. Cook eggs until whites are set but yolks remain runny, about 3-4 minutes. Cover the skillet briefly to help whites cook evenly if desired.
  8. Remove from heat and sprinkle with fresh chopped herbs and a dash of smoked paprika or chili flakes if using.
  9. Serve immediately while the crust is crispy and yolks are luscious.
