  • Ready-made flatbreads (Stonefire Naan preferred)
  • 2 cups (about 300g) cooked shredded chicken breasts or thighs
  • ½ cup (120ml) smoky BBQ sauce (Sweet Baby Ray’s or homemade)
  • 1 cup (100g) shredded mozzarella cheese
  • ½ cup (50g) smoked gouda or sharp cheddar cheese
  • Thinly sliced red onion
  • Chopped fresh cilantro or parsley (optional)
  • Olive oil for brushing flatbread edges
  • Optional toppings: sliced jalapeños, corn kernels, diced pineapple

Instructions

  1. Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat.
  2. In a mixing bowl, toss cooked shredded chicken with BBQ sauce until well coated. Set aside.
  3. Place flatbreads on a baking sheet or pizza stone. Lightly brush edges with olive oil.
  4. Spread a thin layer of BBQ sauce over each flatbread, leaving a ½ inch (1 cm) border around edges.
  5. Distribute BBQ-coated chicken evenly over the sauced flatbread.
  6. Sprinkle shredded mozzarella and smoked gouda or cheddar evenly over the chicken.
  7. Add thin slices of red onion and any optional toppings like jalapeños or corn.
  8. Bake flatbreads in the oven for 10-12 minutes until cheese is melted, bubbly, and edges are crisp and golden.
  9. Remove from oven, sprinkle with fresh cilantro or parsley, and let cool for a couple of minutes before serving.

Notes

Do not overload flatbread with sauce or chicken to avoid sogginess. Preheat pizza stone for best crispness. Let flatbread rest a few minutes after baking for easier slicing. Simmer BBQ sauce to thicken if too watery. For a smokier flavor, add smoked paprika or chipotle powder to BBQ sauce.
