A quick and easy keto-friendly BLT salad featuring crispy bacon, fresh avocado, feta cheese, and a lemony vinaigrette. Perfect for busy weeknights and low-carb diets.

  • 8 slices thick-cut bacon
  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 large ripe avocado, diced
  • ½ cup crumbled feta cheese
  • ¼ cup red onion, thinly sliced (optional)
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat. Lay bacon strips flat in a single layer and cook, flipping occasionally, until crispy and golden, about 8-10 minutes. Remove bacon to paper towels to drain.
  2. While bacon cooks, chop romaine lettuce into bite-sized pieces. Halve cherry tomatoes, dice avocado, thinly slice red onion, and chop fresh parsley. Place all in a large mixing bowl.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper to make the dressing. Adjust seasoning to taste.
  4. Crumble cooled bacon into bite-sized pieces and add to the bowl with the salad ingredients. Sprinkle crumbled feta over the top.
  5. Drizzle dressing over the salad and toss gently but thoroughly, being careful not to mash the avocado.
  6. Taste and adjust salt and pepper if needed. Let the salad sit 2-3 minutes to marry flavors, then serve immediately.

Notes

For extra flavor, sprinkle red pepper flakes or smoked paprika on top before serving. Save a teaspoon of bacon fat and drizzle into the dressing for smoky depth. To avoid avocado browning, add it just before serving and toss gently. Bacon can be baked at 400°F for 15-20 minutes as a hands-off alternative.
