A quick and easy recipe for creamy vanilla cold brew coffee popsicles that are refreshing, smooth, and perfect for summer. These popsicles combine rich cold brew coffee with vanilla and cream for a delightful treat.

  • 2 cups (480 ml) cold brew coffee
  • 1 cup (240 ml) heavy cream or half-and-half (can substitute with full-fat coconut milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons simple syrup or maple syrup (adjust to taste)
  • Pinch of salt (optional)

Instructions

  1. If you don’t have pre-made cold brew, prepare it by steeping coarsely ground coffee in cold water for 12-24 hours, then strain. Use about 1 cup (240 ml) of strong cold brew for this recipe.
  2. In a medium bowl, whisk together 2 cups (480 ml) cold brew, 1 cup (240 ml) heavy cream or half-and-half, 1 teaspoon vanilla extract, and 2-3 tablespoons sweetener until fully combined. Taste and adjust sweetness if needed. Add a pinch of salt to brighten flavors if desired.
  3. Carefully pour the mixture into your popsicle molds, leaving a small space at the top to allow for expansion. Insert sticks if your molds require it.
  4. Place molds flat in the freezer for at least 6 hours or overnight until completely frozen solid.
  5. To remove popsicles easily, run warm water on the outside of the molds for a few seconds. Gently pull the popsicles free and enjoy.

Notes

For a dairy-free version, substitute heavy cream with full-fat coconut milk and use maple syrup for sweetness. To avoid icy popsicles, do not skip the cream and use syrup-based sweeteners instead of granulated sugar. For layered popsicles, freeze half the mixture first, then add the remaining half and freeze again. Adding a pinch of cinnamon or cocoa powder can add a nice twist.
