  • 1/3 cup (35 g) freshly grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or butter (for searing, optional)
  • Fresh basil, chopped (optional, for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels.
  2. Optional: Heat olive oil or butter in a skillet over medium-high heat and sear chicken breasts for 2 minutes per side until golden brown.
  3. Place chicken breasts in the bottom of the slow cooker in a single layer.
  4. In a mixing bowl, whisk together heavy cream, chicken broth, Parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, red pepper flakes (if using), salt, and pepper.
  5. Pour the sauce evenly over the chicken in the slow cooker and gently shake to settle the sauce.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  7. If the sauce is too thin after cooking, remove chicken and stir sauce, then cook uncovered on high for 15-20 minutes to thicken. Adjust seasoning as needed.
  8. Garnish with chopped fresh basil and serve over pasta, rice, or with crusty bread.

Notes

Searing the chicken before slow cooking is optional but recommended for extra flavor and better texture. Avoid lifting the lid during cooking to maintain heat.
