  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (oil-packed recommended)
  • 1/2 cup chicken broth (120 ml), low sodium
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (or fresh basil and oregano)
  • Pinch of red pepper flakes (optional)
  • Fresh basil leaves, chopped for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat a large skillet over medium-high heat and add olive oil and butter. Let the butter melt and foam but not brown, about 1-2 minutes.
  3. Add the chicken breasts and cook without moving for 5-6 minutes until golden crust forms. Flip and cook another 5 minutes until cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside tented with foil.
  4. Lower heat to medium and add minced garlic to the same pan. Stir for about 30 seconds until fragrant, then add chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in chicken broth to deglaze the pan, scraping browned bits with a wooden spoon for 1-2 minutes as broth reduces slightly.
  6. Stir in heavy cream and grated Parmesan cheese. Cook gently for 3-4 minutes until cheese melts and sauce thickens. Add more broth or cream if sauce is too thick.
  7. Add dried Italian herbs and red pepper flakes if using. Taste and adjust seasoning with salt and pepper.
  8. Return chicken to the pan, nestle into the sauce, spoon sauce over top, and simmer gently for 3-4 minutes to meld flavors and warm through.
  9. Garnish with chopped fresh basil and serve hot.

Pat chicken dry before searing for a good crust. Deglaze pan with broth to build flavor. Keep heat moderate when adding cream and cheese to prevent sauce separation.
