  • 46 boneless, skinless chicken thighs
  • 1.5 pounds baby potatoes, halved or quartered if large
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon dried Italian herbs (or mix of oregano, basil, and thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional garnish: fresh parsley or chives, chopped

Instructions

  1. Wash and halve the baby potatoes (or quarter if large). Toss them in the melted butter with a pinch of salt and pepper to coat well.
  2. In a medium bowl, whisk together the heavy cream, minced garlic, freshly grated parmesan, Italian herbs, salt, and pepper until smooth.
  3. Place the potatoes in an even layer at the bottom of the crockpot. Arrange the chicken thighs on top.
  4. Pour the creamy garlic parmesan sauce evenly over the chicken and potatoes.
  5. Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours, until chicken reaches an internal temperature of 165°F and potatoes are tender.
  6. Once cooked, gently stir to coat the chicken and potatoes in the sauce. Adjust seasoning if needed.
  7. Sprinkle with fresh parsley or chives before serving.
  8. Optional: For a crispy finish, broil the chicken for 2-3 minutes, watching carefully to avoid burning.

Notes

Use freshly grated parmesan cheese for best texture and flavor. Browning chicken before slow cooking is optional but adds depth. If sauce is too thin at the end, stir in a teaspoon of cornstarch slurry and cook on high for 15 minutes to thicken. Leftovers taste better the next day. For dairy-free, substitute heavy cream with coconut cream and parmesan with nutritional yeast.
