A quick and easy smoothie that tastes just like key lime pie with a creamy coconut twist, perfect for a refreshing treat any time of day.

Ingredients

  • 1 medium frozen banana, sliced
  • 1 cup (240 ml) full-fat canned coconut milk
  • 2 tablespoons (30 ml) fresh key lime juice
  • 1 tablespoon (15 ml) honey or maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • ½ cup (120 g) plain Greek yogurt (or coconut yogurt for vegan)
  • ½ cup (120 ml) ice cubes
  • 1 tablespoon graham cracker crumbs (optional, for garnish)

Instructions

  1. If you haven’t frozen your banana yet, slice a ripe banana and freeze for at least 2 hours. Juice fresh key limes just before making the smoothie and strain out seeds.
  2. Add frozen banana slices, coconut milk, key lime juice, honey or maple syrup, vanilla extract, Greek yogurt, and ice cubes to a high-speed blender.
  3. Blend on low speed, gradually increasing to high, until smooth and creamy, about 1-2 minutes. Scrape down sides as needed. Adjust thickness by adding more coconut milk or frozen banana/ice.
  4. Taste and adjust sweetness or lime juice as desired.
  5. Pour into glasses and sprinkle graham cracker crumbs on top if using. Serve immediately.

Notes

Use frozen banana for best creamy texture. Full-fat canned coconut milk is recommended for richness. Fresh key lime juice provides the best flavor. For vegan version, substitute Greek yogurt with coconut yogurt and honey with maple syrup. Adding graham cracker crumbs on top mimics the pie crust texture. If smoothie is too thick, add more coconut milk; if too thin, add more frozen banana or ice. Can be stored in fridge up to 24 hours; stir before drinking.
