  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil for cooking chicken

Instructions

  1. Slice chicken breasts into thin strips, mince garlic, and chop fresh parsley and thyme. Bring a large pot of salted water to boil for the pasta.
  2. Add fettuccine to boiling water and cook until al dente, about 10-12 minutes. Stir occasionally to prevent sticking. Reserve ½ cup (120 ml) pasta water before draining.
  3. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken strips in a single layer, season with salt and pepper, and cook until golden brown and cooked through, about 3-4 minutes per side. Remove chicken and set aside.
  4. In the same skillet, reduce heat to medium-low and add butter. Once melted, stir in minced garlic and sauté for 1-2 minutes until fragrant but not browned. Pour in heavy cream and bring to a gentle simmer, stirring frequently.
  5. Gradually whisk in grated Parmesan until the sauce is smooth and creamy. Add chopped parsley and thyme, and season to taste with salt and pepper. If the sauce feels too thick, add reserved pasta water a tablespoon at a time to loosen it.
  6. Add cooked fettuccine and chicken back to the skillet. Toss gently to coat everything evenly in the sauce. Heat through for 2-3 minutes to meld flavors.
  7. Taste and adjust seasoning if needed. Serve immediately, garnished with extra Parmesan and fresh herbs if desired.

Do not overcook the chicken to keep it juicy. Cook garlic on moderate heat to avoid bitterness. Reserve pasta water to loosen sauce if needed. Freshly grated Parmesan is recommended for best sauce texture. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
