  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme

  • 2 tablespoons vegetable oil or olive oil
  • 250ml (1 cup) beef stock
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Peel and dice the potatoes into roughly 1/2-inch cubes. Set aside.
  2. Heat 2 tablespoons of vegetable oil over medium heat in a large skillet. Add chopped onion and garlic and sauté for 3-4 minutes until translucent and fragrant.
  3. Add minced beef to the pan, breaking it up with a spoon. Cook for 7-8 minutes until browned and no pink remains. Drain excess fat if desired.
  4. Stir in tomato paste, Worcestershire sauce, smoked paprika, and dried thyme. Cook for 2 minutes to release flavors.
  5. Add diced potatoes and 1 cup beef stock to the pan. Stir to combine.
  6. Reduce heat to low, cover with a lid, and simmer gently for 20-25 minutes, stirring occasionally until potatoes are tender.
  7. Taste and adjust salt and pepper. If too thick, add a splash more stock or water; if too watery, cook uncovered for a few minutes to reduce.
  8. Sprinkle with fresh parsley and serve warm.
