  • ¾ cup (150 grams) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (120 grams) chopped walnuts, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  2. Toast the walnuts in a dry skillet over medium heat, stirring frequently for about 5 minutes until fragrant and lightly browned. Remove from heat and let cool.
  3. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. In a separate bowl, mash the bananas with a fork or potato masher until mostly smooth with some small lumps remaining.
  5. Add the melted butter, granulated sugar, eggs, and vanilla extract to the mashed bananas and whisk until smooth and well blended.
  6. Pour the wet ingredients into the dry ingredients and gently fold together with a wooden spoon or spatula just until combined. Do not overmix.
