Cozy Hearty Hobo Casserole

A quick and easy family-friendly casserole featuring ground beef, potatoes, and veggies topped with melted cheddar cheese. Perfect comfort food for busy weeknights.

  • 1 lb (450 g) lean ground beef (85%)
  • 4 medium yellow potatoes (Yukon Gold), diced (about 2 lbs)
  • 1 medium yellow onion, diced
  • 2 large carrots, sliced
  • 1 medium green bell pepper, diced
  • 3 garlic cloves, minced
  • 1 cup (240 ml) low sodium beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup (100 g) shredded cheddar cheese
  • Salt and freshly ground black pepper, to taste
  • 1 tsp dried thyme
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until no longer pink, breaking it apart with a spatula (about 6-8 minutes). Drain excess fat and transfer beef to a bowl.
  3. In the same skillet, add diced onion, carrots, bell pepper, and minced garlic. Cook over medium heat until softened and fragrant, about 5-7 minutes.
  4. Stir in tomato paste, Worcestershire sauce, and dried thyme. Cook for another 2 minutes.
  5. Return browned beef to the skillet, pour in beef broth, and season with salt and pepper. Let simmer for 3-4 minutes to meld flavors.
  6. Dice potatoes into roughly ½-inch cubes (peeling optional).
  7. Lightly grease a 9×13-inch baking dish. Spread half the potatoes evenly on the bottom. Spoon half the beef mixture over the potatoes. Repeat layers, finishing with beef mixture on top.
  8. Cover the dish tightly with foil and bake for 35 minutes to steam and soften potatoes.
  9. Remove foil, sprinkle shredded cheddar cheese evenly over the top. Bake uncovered for an additional 10 minutes or until cheese is melted and golden.
  10. Let the casserole rest for 5 minutes before serving.

Notes

If potatoes are not tender after the initial covered bake, add an extra 10 minutes covered before adding cheese. Browning the beef adds caramelized flavor. Use foil to trap steam and keep potatoes moist. Cheese blends like cheddar and Monterey Jack add extra creaminess. Let casserole rest before serving for easier slicing.
