  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, a handful chopped
  • Egg noodles or rice, cooked, for serving

Instructions

  1. Slice the beef into thin strips about 1/4 inch thick. Clean and slice the mushrooms, finely chop the onion, and mince the garlic. Set aside.
  2. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the beef strips in a single layer and cook about 2 minutes per side until browned but not fully cooked. Remove beef and set aside.
  3. Lower heat to medium and add remaining 2 tablespoons butter. Cook onions until translucent, about 3-4 minutes. Add garlic and cook 30 seconds until fragrant.
  4. Add sliced mushrooms and sauté until they release moisture and start to brown, about 6-7 minutes, stirring occasionally.
  5. Sprinkle flour over mushroom mixture and stir well. Cook 1-2 minutes to remove raw flour taste.
  6. Gradually pour in beef broth while stirring to avoid lumps. Add Worcestershire sauce, Dijon mustard, salt, and pepper. Simmer until sauce thickens slightly, about 4-5 minutes.
  7. Return browned beef and juices to skillet. Stir in sour cream off the heat to prevent curdling. Adjust seasoning as needed.
  8. Serve stroganoff over warm egg noodles or rice. Garnish with chopped fresh parsley.

Do not overcook the beef at the start; just sear to lock in juices. Stir sour cream in off the heat to keep sauce smooth. Pat beef dry before cooking to ensure good browning. For gluten-free, substitute flour with gluten-free flour or almond/oat flour. For dairy-free, use dairy-free butter and coconut cream or plant-based yogurt instead of sour cream.
