Brown Sugar Glazed Carrots

A quick and easy homemade comfort side dish featuring tender carrots coated in a glossy, caramel-like brown sugar glaze. Perfect for busy weeknights or holiday dinners.

  • 1 pound fresh carrots, peeled and cut into 1/2-inch thick slices or baby carrots
  • 1/4 cup packed light brown sugar (50 g)
  • 2 tablespoons unsalted butter, melted (30 g)
  • 1/4 cup water or vegetable broth (60 ml)
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • Optional: pinch of cinnamon or nutmeg

Instructions

  1. Peel and slice the carrots into roughly 1/2-inch thick rounds or use baby carrots. This step usually takes about 5 minutes.
  2. Place a large skillet over medium heat and add the melted butter. Let it warm until it just starts to foam—about 1 minute.
  3. Toss the carrots into the skillet and stir to coat them evenly with the butter. Cook for about 3-4 minutes, stirring occasionally, until they start to get a little color on the edges.
  4. Sprinkle the brown sugar evenly over the carrots, then pour in the water or broth. Stir gently to combine. You should see the sugar begin to dissolve and the liquid start to bubble within a minute.
  5. Reduce heat to medium-low and cover the skillet with a lid. Let the carrots simmer for 8-10 minutes, stirring once or twice. The liquid will reduce and thicken into a glaze coating the carrots.
  6. Remove the lid, season with salt, pepper, and optional cinnamon or nutmeg. Stir and cook uncovered for another 2 minutes to let the glaze thicken further and the carrots become tender but still firm to the bite.
  7. Transfer to a serving bowl and enjoy immediately, or keep warm until ready to eat.

Notes

Do not overcook the carrots; they should be tender but still have a slight snap. Use medium to medium-low heat to prevent burning the sugar. If glaze is too runny, cook uncovered a bit longer; if too thick, add a splash of water or broth. For a vegan version, substitute butter with coconut oil or vegan butter.
