Ingredients

  • Baguette or French bread, sliced into ½-inch thick pieces
  • Goat cheese, softened (about 1 tablespoon per crostini)
  • Fresh blackberries, 2-3 per crostini
  • Honey, about ½ teaspoon per crostini
  • Olive oil, extra virgin, for brushing
  • Fresh thyme or mint leaves (optional)
  • Freshly cracked black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the baguette into ½-inch thick slices.
  3. Brush each slice lightly with olive oil on both sides.
  4. Arrange the slices on a baking sheet in a single layer without overlapping.
  5. Toast in the oven for about 8-10 minutes, flipping halfway through, until golden and crisp.
  6. Remove bread from oven and let cool slightly.
  7. Spread about 1 tablespoon of softened goat cheese on each crostini.
  8. Top each with 2-3 fresh blackberries, gently pressing them into the cheese.
  9. Drizzle about ½ teaspoon of honey over each crostini.
  10. Finish with a sprinkle of freshly cracked black pepper and optional fresh thyme or mint leaves.
  11. Serve immediately.

Notes

Let goat cheese sit at room temperature for 20 minutes before spreading for creamier texture. Brush bread with olive oil to prevent dryness and add golden crust. Use firm, plump blackberries and drain if very juicy to avoid soggy bread. Assemble crostini just before serving to keep bread crisp.
